CFN – Kristin Blasiak, our Paleo Princess, pays tribute as the Christmas holiday approaches to Lamb Chops!
Well it’s coming close to Christmas so I decided to pay homage to a dish that we would often eat during the holiday season while we lived in Australia: Grilled lamb chops!
We had a surprisingly mild day today so it wasn’t too bad to fire up the Bbq, although you know me, I will Bbq even in a winter storm!
I used a very simple recipe for the lamb, just slicing it and rubbing the chops with avocado oil, salt and pepper before placing it on the grill.
For the bok choy, I used the same recipe from a couple posts ago but I added a few squeezes of fresh lemon, which really brightened up the side dish.
Being Vegetable Haters favourite protein, I had to give him a side that would complement it and I immediately thought of couscous, which turned out to be a great pairing.
At least that’s what I gathered from the scraped-clean plate that he left me!
As a Paleo devotee, my successes and failures are dedicated to leading a healthy Paleo-inspired lifestyle. Most of my recipes do not include exact measurements because I rely heavily on my intuition when cooking. These measurements also fluctuate depending on how many people you are cooking for and your personal preferences so I invite you to put your own personal spin on any recipes I post.
