CFN – Our Paleo Princess Kristin Blasiak whips up an warm and comforting dish using up left overs from around the house that will stick to your ribs!
Today’s dish is Chicken Fried Rice Paleo Style!
Here’s Kristin!
Ingredients
Cooked chicken
Cauliflower
Diced carrots
2 Eggs
Garlic
Scallions
Sesame oil
Soy sauce (low sodium)
Fish sauce
Peas
Directions
In a large skillet, heat up sesame oil.
Add the onions, carrots and garlic and stir for approximately 5 minutes.
Food process the cauliflower until it takes on a rice consistency and add to skillet.
Pour in soy sauce, chicken and peas and and stir until combined.
Add the fish sauce and allow to cook for about 5 more minutes, stirring every once and a while.
Whisk two eggs and add into skillet, stirring so that they scramble.
Serve and enjoy!
