Wow, so I tried this out on a whim, pretty much accepting defeat before I even began but lo and behold- it worked! It even tastes better than peanut brittle but I’m happy to say it’s Paleo! 🙂
I can’t wait to try different flavour combinations for this recipe. Perhaps make a batch that is a little bit spicy with some cayenne.
What are some of your favourite ways to jazz up a sweet snack?
Ingredients:
Unsalted cashews
Honey
Coconut oil
Agave syrup
Unsweetened coconut flakes
Cocoa powder
Sea salt
Directions:
Melt coconut oil in a pan and add cashew, honey, cocoa powder and agave.
Stir mixture around and allow to cook for about 10-15 minutes.
Pour mix onto parchment paper and top with coconut flakes and sea salt.
Place in freezer overnight.
Break into smaller pieces and enjoy!
